Spanish-Inspired Gratin
A recipe for anyone looking to eat less meat without compromising on flavour. A good quality Merguez sausage arranged on top of the Potato Gratin lends this dish an interesting Mediterranean flavour.
Ingredients
Serves 4–6:
- 2 kg Mediterranean Potato Gratin
- 400 g cherry tomatoes
- 100 g spring onions
- 100 g Merguez sausage
- Parsley
Preparation
- Pre-heat the oven to 200 °C.
- Thinly slice the spring onions and stir into the Potato Gratin with the cherry tomatoes.
- Place the mix in a casserole dish and sprinkle with crumbled or diced Merguez sausage.
- Bake the Potato Gratin on the middle shelf of the oven for 20 minutes.
- Garnish with parsley.
