Potato Curry
Vegetable and potato stew in a tasty spicy curry sauce.
Vegetarian!
Ingredients
Serves 10:
- 2 kg Potato Cubes
- Curry paste to taste
- 1 red chilli pepper
- 3 red peppers
- 2 heads of pak choi
- 2 onions
- Coconut milk or single cream to taste
Preparation
- Finely chop the vegetables and sauté in a pan.
- Add some butter or oil to a large pan and lightly fry the Potato Cubes.
- Add the vegetables to the Potato Cubes.
- Add curry paste to taste and sauté briefly to let the spices develop.
- Add the coconut milk or single cream to form a creamy mix.
- Bring to the boil and reduce briefly to a creamy consistency.
- Suggestion: serve with naan bread.
