Ingredients
Makes 12:
- 2 kg Potato Cubes 12 mm
- 2 onions
- 200 g chorizo
- 200 g grated cheese
- 10 eggs
Preparation
- Pre-heat the oven to 150 °C.
- Dice the onions and chorizo and cook in a large (oven-proof) pan for 12–14 minutes until golden-brown.
- In a bowl, mix the eggs with the grated cheese until smooth.
- Add the egg mix to the pan and thoroughly stir through the potatoes once.
- Place the pan on the middle shelf of the oven and cook for 25 minutes.
