Gratin with Forgotten Vegetables
Keen to eat more vegetables but fancy something different for a change?
Why not combine Potato Gratin with grilled parsnip.
Ingredients
Serves 4:
- 700 g Potato Gratin Deluxe
- 4–6 parsnips
- 3 tablespoons of pumpkin seeds, roughly chopped
- 2 tablespoons of sunflower seeds
- 100 g grated Parmesan
- 1 egg white
- Salt
- Pepper
Preparation
- Pre-heat the oven to 225 °C.
- Halve the parsnips lengthways and place in a casserole dish.
- Add oil, salt and pepper and bake in the oven for 30 minutes.
- After half the time, add the Potato Gratin to the oven
- Mix the seeds with the Parmesan.
- Remove the parsnips from the oven and coat with egg white.
- Sprinkle seeds and cheese mix over the parsnips.
- Return the casserole dish to the oven for 10 minutes.
- Serve the parsnips with the Potato Gratin.
