Ingredients
For 10 servings:
- 2 kg Potato Slices 6 mm
- 2 vegetable stock cubes
- 300 g bacon in cubes or strips
- 2 onions
- 50 ml vinegar
- 100 g sugar
- 1 tablespoon mustard
- Oil
- Parsley
- Pepper
- Salt
Preparation
- Dice the onions and sauté in a pan with the bacon.
- Add the sugar and allow to caramelise briefly.
- Deglaze with vinegar and bring to the boil briefly.
- Add the stock cube and boil down.
- Place the Potato Slices in a pan and pour in the bacon stock.
- Heat briefly but do not bring to the boil.
- Add the mustard and season with pepper and salt.
- Leave the salad to cool and garnish with chopped parsley.
