Mashed potato pancakes

Homemade mashed potatoes are perfectly rich and creamy full of flavour topped off with ham strips, onion, bell pepper.

Ingredients

Serves 5:

  • 10 pcs. Peka potatoes Mids
  • 1 finely chopped red onion
  • 50 g boiled ham
  • 50 g red pepper
  • 50 g grated cheese
  • 4 tbsp. olive oil
  • 2 cloves of garlic

 

Preparation

  1. Mash the potatoes with a fork and flatten them with your hands. Drizzle a little olive oil and sprinkle some grated garlic on top.
  2. Bake the potato cakes in the oven for 10 minutes at 200 °C.
  3. Cut the ham into strips. Finely chop the pepper and onion. Sprinkle ham, onion, bell pepper on the potato cakes and finally add grated cheese.
  4. Bake the potato cakes with the toppings for an additional 5 minutes in the oven at 200 °C.
