Red potato salad
A freshly made potato salad with red bell pepper and cherry tomatoes, suitable for a complete meal.
Ingredients
Serves 2:
- 500 g Peka mini potatoes
- 1 apple
- 1 red bell pepper
- 15 cherry tomatoes
- 1 spring onion
Red pesto
- 2 grilled peppers
- 100 g sun-dried tomatoes
- 50 g parmesan
- 2 tbsp. tomato concentrate
- 1 tbsp. paprika
- 1 tbsp. lemon juice
- 20 g almonds
- 3 dl olive oil
- 1 tsp. salt
Toppings
- 50 g feta
Preparation
- Finely chop the apple and pepper and cut the tomatoes into quarters. Then toss it all together with the potatoes.
- Mix all the ingredients for the pesto together to a uniform mass. Mix pesto and potato salad together. Finally, sprinkle some coarsely grated feta on top.
