Red potato salad

A freshly made potato salad with red bell pepper and cherry tomatoes, suitable for a complete meal.

Ingredients

Serves 2:

  • 500 g Peka mini potatoes
  • 1 apple
  • 1 red bell pepper
  • 15 cherry tomatoes
  • 1 spring onion

Red pesto

  • 2 grilled peppers
  • 100 g sun-dried tomatoes
  • 50 g parmesan
  • 2 tbsp. tomato concentrate
  • 1 tbsp. paprika
  • 1 tbsp. lemon juice
  • 20 g almonds
  • 3 dl olive oil
  • 1 tsp. salt

Toppings

  • 50 g feta

 

Preparation

  1. Finely chop the apple and pepper and cut the tomatoes into quarters. Then toss it all together with the potatoes.
  2. Mix all the ingredients for the pesto together to a uniform mass. Mix pesto and potato salad together. Finally, sprinkle some coarsely grated feta on top.
