Potato risotto
Risotto made from potato cubes with mushrooms, onion, parmesan and parsley.
Ingredients
Serves 4:
- 350 g Peka Potato Cubes 12 mm
- 50 g finely chopped onion
- 50 g finely chopped red onion
- 100 g sliced mushrooms
- 150 ml. beef broth
- 100 g grated parmesan
- Salt and pepper
- Small bunch of parsley
Preparation
- Fry onions and mushrooms well in a pan with oil. Then add potatoes and beef broth. Let it cook for approx. 10 minutes.
- Add the grated parmesan, mix it well and sprinkle with parsley at the end.
