Potato risotto

Risotto made from potato cubes with mushrooms, onion, parmesan and parsley.

Ingredients

Serves 4:

  • 350 g Peka Potato Cubes 12 mm
  • 50 g finely chopped onion
  • 50 g finely chopped red onion
  • 100 g sliced mushrooms
  • 150 ml. beef broth
  • 100 g grated parmesan
  • Salt and pepper
  • Small bunch of parsley

 

Preparation

  1. Fry onions and mushrooms well in a pan with oil. Then add potatoes and beef broth. Let it cook for approx. 10 minutes.
  2. Add the grated parmesan, mix it well and sprinkle with parsley at the end.
